About

Hey there, I’m Lee!

Welcome to my little corner of the internet! I’m so excited you decided to stop by for a visit!!

This blog is a passion project that sprang out of the mysterious disappearance of my metabolism in my early 30’s, which was followed by weight gain, chronic digestive issues and my eventual discovery of The Whole30 Program.

The Whole30 program (which I’ve done five times, along with one Whole120) is a 30 day dietary (not diet) reset in which you eliminate dairy, grains, legumes, sugar (including artificial sweeteners) and alcohol for 30 days. I know that this sounds hard, and it is trying, but its totally doable if you really want to identify the specific foods that are problematic for you personally. For me, The Whole30 Program enabled me to reverse the negative effects of my bad eating habits and create a mindset in which I prioritized eating whole, unprocessed or minimally proceed foods like fruits, vegetables, lean meats and healthy fats…just like our ancestors did. And by ancestors I mean my great-grandparents as opposed to cavemen because I’m not going to start hunting animals with my bare hands or eating raw meat…except for sushi…and carpaccio.

Because the Whole30 is not intended to be a lifestyle, I’m now living Paleo which includes all of the foods that make me feel my best plus a few other bits and bobs.

So, why would someone that has no clue about computers or websites decide to start a food blog???? Good question! After discovering how amazing I felt eating Whole30/Paleo I literally COULDN’T stop talking about it (ask anyone I know and any strangers I have met within the past few years)!! And I realized that the best way to spread the word was to start this blog so I could share with you (yes, YOU!!) my experiences, the resources I discovered along my journey and most importantly the whole, paleo eats that I love.

Just a quick note about my recipes…

  1. sometimes I include exact amounts (1 Tbs) and sometimes I include only rough measurements (1/2 a bell pepper). This is because cooking is as much an art as it is a science. Feel free to use my recipes as inspiration and increase or decrease ingredient amounts (or even cooking times) as you see fit. As they say, you do you!
  2. because the dishes that I make include unprocessed or minimally processed ingredients, I don’t count calories or macronutrients…so you won’t find this information within my recipes.
  3. recipes noted to be Whole30 are Whole30 compliant, but they may not be complete meals according to the Whole30 meal template. A Whole30 meal needs to include veggies, a serving of protein and a healthy fat in the correct proportions. See the Whole30 Meal Planning PDF for more information.

To wrap things up, a few fun facts about me…

  • I’ve been cooking my whole life  (growing up my parent’s owned a restaurant and I worked there every weekend and every summer).
  • I prefer cooking to baking because its much more forgiving!
  • My husband’s name is Stu and he’s English…and yes, he has an adorable accent.
  • We have two fur babies (longhair cats)…and are childless by choice.
  • I love lists, and checking things off of lists.
  • I’m obsessed with Hallmark rom-coms…and I almost always cry at the end.
  • I listen to pod-casts while I cook…usually business related or true crime (True Crime Garage is my fav!)
  • I use waaaaay to many exclamation points for an adult and I don’t care!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Thanks again for stopping by and if you have any questions or comments, please feel free to comment on my posts OR e-mail me!
