Pineapple Chicken Kabobs (Paleo, Whole30)

Kabobs are one of the best parts about summer in our house. First, they are easy to make…just cut up some meat and veggies, thread it all on a kabob stick, season and grill till done! Second, they are something that Stuart and I enjoy cooking together. I do the food prep and he mans the grill. He’s actually got an amazing ability to get the veggies perfectly al dente and the meat moist and juice (unlike when I grill and everything come out overcooked)! Third, there minimal clean-up.

The inspiration for these Pineapple Chicken Kabobs was an Instagram post for a grilled peach dessert. I don’t really care for grilled peaches, and I don’t really like dessert…but I thought it would be fun to incorporate grilled fruit into a sweet and savory main dish.

I started by soaking some wooden kabob skewers in water (so they don’t catch on file while on the grill). While the skewers soaked, I cut up a few bell peppers and red onions. I then cubed a few pounds of chicken breast. I then coated the veggies in chicken in olive oil and my Mexican Spice Blend (or you could use taco seasoning or Cajun seasoning if you prefer). Next, I cut up a few pineapple rings. I then threaded the veggies, meat and pineapple on the skewers.

Stuart took over from there and grilled the kabobs to perfection.  We paired the final product with some lovely Cilantro Lime Cauliflower Rice and Traditional Spicy Guacamole for a fulling Whole30/Paleo meal.

Pineapple Chicken Kabobs (Paleo, Whole30)

Ingredients
  • 3 Bell peppers, cut into large pieces
  • 2 Medium red onions, cut into large pieces
  • 2 Lbs of chicken, diced
  • 5 Pineapple rings, cut into bite sized pieces
  • 2 Tbs Olive Oil
  • 2 Tbs of Mexican Spice Blend or Cajun Seasoning
Instructions
  1. If using wooden skewers, soak them in what while you prepare the rest of the ingredients.
  2. Place the pepper and onions in a mixing bowl, coat with 1 Tbs of olive oil and 1 Tbs of seasoning.
  3. Place the chicken in another mixing bowl, coat with 1 Tbs of olive oil and 1 Tbs of seasoning.
  4. Thread the peppers, onions, chicken an pineapple on the skewers.
  5. Grill until the meat is fully cooked.
