Spicy Shrimp Tacos with Mango Salsa (Paleo, Whole30)

Shrimp Tacos with Mango Salsa on butter lettuce leaves.

After making, and falling in love with, my Sweet and Spicy Mango Salsa  I just had to find other ways to use it. These Spicy Shrimp Tacos with Mango Salsa are one of the many ways to use my magical mango salsa. Which looks like this in case you were wondering:

If you make this salsa, and you don’t eat it all in one sitting (not that I’ve done that), I highly recommend you make these pretty little Paleo/Whole30 Spicy Shrimp Tacos with Mango Salsa that require only a head of tender butter lettuce leaves, 2 Tbs Cajun spice blend, 1 Lb of raw shrimp, 1 cup of my Sweet and Spicy Mango Salsa and 1 cup of guacamole (no pictured, but required as a platted fat for a Whole30 compliant dish).

If my Sweet and Spicy Mango Salsa isn’t your thing, my feelings will only be a little hurt, and you can use your favorite homemade salsa recipe OR a pre-made version as long as it’s sugar free!

Spicy Shrimp Tacos with Mango Salsa

A quick and easy version of Paleo/Whole30 tacos!
Ingredients
  • 1 Lb raw shrimp, peeled.
  • 1 large head of butter lettuce (or iceberg)
  • 1 cup of salsa
  • 1 cup of guacamole
  • Sugar-free hot sauce (optional)
Instructions
  1. Wash and dry the lettuce leaves.
  2. Peel the shrimp, pat them dry with paper towels, season them with the Cajun seasoning.
  3. Sear the shrimp in a medium/hot pan (they are cooked when they are opaque).
  4. Plate the lettuce leaves in piles.
  5. Top the lettuce leaves with shrimp.
  6. Top the shrimp with the salsa.
  7. Top the salsa with guacmole.
  8. Sprinkle with hot sauce (optional).
  9. These little guys are messy so feel free to eat them with a knife and fork!
