Mushroom and Green Bean Sheet Pan (Whole30, Paleo, Vegan, Vegetarian)

I can’t believe it took me so long to discover the magic that is sheet pan cooking! A few ingredients, tossed on a parchment paper lined baking sheet and baked at 400 F for 30 minutes makes for a quick and easy side dish to help feed a crowd. Or make it on the weekend as part of your weekly meal prep that can be enjoyed hot or cold, with your protein of choice!

Mushroom and Green Bean Sheet Pan (Whole30, Paleo, Vegan, Vegetarian)

A quick and easy sheet pan side dish to serve a crowd! Or make it over the weekend as part of your weekly meal prep.
Ingredients
  • 2 lbs of French green beans (or regular if you prefer)
  • 1 package of baby bella mushrooms, halved
  • 5 cloves of garlic, smashed or minced
  • 1 small red onion, think sliced
  • 1 sprig fresh rosemary, minced
  • 1 Tbs olive oil or ghee
  • Salt and pepper to taste
Instructions
  1. Pre-heat oven to 400 F.
  2. On a parchment paper lined full baking sheet combine all of the ingredients...toss to coat.
  3. Bake for 25-30 minutes.
  4. Enjoy!
