Sweet and Spicy Mango Salsa (Whole30, Paleo)

At any gathering of family or friends, the food table always includes two things…salsa and a bag of corn chips. Whether it’s Super Bowl Sunday, a summer BBQ or a birthday party, there is always a bowl of salsa. It usually comes from a jar…or maybe a plastic tub…but once in a blue moon someone makes it from scratch and it’s a fresh, colorful, tangy, slightly spicy thing of glory!

This Sweet & Spicy Mango Salsa is exactly that…glorious. It’s made with roma tomatoes (which are more meaty), red onion, fresh mango for sweetness, bell peppers for body, jalapeño for a bit of heat, cilantro (I’m a huge fan), garlic, lime and…wait for it…cumin!!

An it couldn’t be easier to make…you just need a bowl, a cutting board, a good knife and a teaspoon for measuring (or you could just guess if you like to live on the wild side!).  

I recommend making it the night before so the flavors can marry…because the flavor only gets better with time.

And you Whole30ers don’t have to miss out on the fun! This salsa is a perfect condiment over a burger, chicken or fish. Or use it as salad dressing! If you are Paleo, enjoy it with grain-free chips of course!

Sweet and Spicy Mango Salsa (Whole30, Paleo)

Sweet and spicy and totally yummy!
Ingredients
  • 6 Roma tomatoes, diced
  • ½ red onion diced
  • ½ yellow bell pepper, diced
  • 2 mangos, diced
  • 1 jalapeno pepper, small diced (deseed to decrease the heat)
  • 1-2 cloves Garlic, pressed
  • Handful of cilantro, excluding stems
  • Juice of 1 lime
  • 1 tsp cumin
  • Salt/pepper to taste
Instructions
  1. Mix everything in a bowl.
  2. Transfer the mixture to a storage container and put it in the refrigerator for a few hours to let the flavors marry!
