I’ve never been one to eat breakfast first thing in the morning…which means that on weekdays I pack and bring my breakfast to work and eat at my desk as I read through e-mails. It’s not ideal but it’s real life! But don’t misunderstand, my desk breakfasts are not unhealthy or boring! I love a well rounded, veggie packed, hot breakfast…and this Sausage Omelette-To-Go fits the bill.
How do you make an Sausage Omelette-To-Go you ask??? Well, let me tell you…
It’s made with 2 eggs, one sugar-free sausage, 1 – 1.5 cups of small diced veggies of your choice, a few splashes of Frank’s Hot Sauce, salt and pepper.
All you do is put all the ingredients in a canning jar (layer it pretty like I did or just throw it all in), put the lid on the jar and then head to work/school or where ever you plan to eat your breakfast!
When you get where you are going, give the jar a good, hard shake and then microwave the jar WITHOUT the lid for 2 minutes. Remove from the microwave with care as the glass will be HOT. Last step, enjoy a hot, filling omelette wherever you are!
Be sure to add a healthy fat and some fruit to round out your Whole30 breakfast.

- 2 large, organic eggs
- 1 sugar-free sausage link
- 1 - 1.5 cups of small diced veggies/herbs
- Frank's Hot Sauce, salt and pepper to taste.
- Prepare your veggies.
- Cook your sausage (if it's not pre-cooked).
- Add all of the ingredients to a canning jar (or other microwave safe container)
- Put the lid on the jar.
- Head to work/school or where ever...
- When you get where you are going, give the jar a few good, hard shakes.
- Microwave the jar WITHOUT the lid for 2 minutes.
- Remove from the microwave with care as the glass will be HOT.
- Enjoy a hot, filling omelette wherever you are!
