Instant Pot Pineapple Pulled Pork (Paleo, Whole30)

Ever wake up super motivated, and then as the day goes on…all the motivation flies out the window? Yeah, me too.  I had originally planned to make BBQ pulled pork with homemade BBQ sauce. But by the time dinnertime arrive, I couldn’t be arsed (as my husband would say) to make the sauce. Thinking quickly, I realized that I could make the pork sweet and savory enough without the BBQ sauce! The result was my Instant Pineapple Pulled Pork!

I seared the pork butt in my Instant Pot (which I love by the way, after having gotten over my initial fear of it), and then added 1 cup of fresh pineapple, 1 large sweet onion, 1 Tbs of garlic, 1/2 cup of sugar free apple juice, salt and pepper.

I cooked it on high pressure/manual for 60 mins, natural release and then let it cool. After removing the fat and pulling the meat, I added back some the pineapple, onions and meat juice and it was delicious without the need for BBQ sauce…although there was a lot less meat than I expected from a 4.5 lb butt! This is one instance in which a bigger butt is better!

Sorry that there isn’t a pic of the final product…I used the last of my motivation that night to make and serve dinner!!

Ingredients
  • 44.5 Lb pork butt
  • 1 cup of fresh pineapple, diced
  • 1 large sweet onion, diced or sliced
  • 1 Tbs of garlic
  • ½ cup of sugar free apple juice
  • salt and pepper
Instructions
  1. In the instant pot, saute the port on all sides using the saute function.
  2. Add the remainder of the ingredients to the instant pot.
  3. Cook on high pressure/manual for 60 mins, natural release and then let it cool.
  4. After removing the fat and pulling the meat, add back some the pineapple, onions and meat juice.
  5. Enjoy!!
