Sweet and Spicy Instant Pot Apply Chutney (Paleo & Whole30)

Hubby is English and he loves curries and chutneys of all sorts! So, I decided to make this Sweet and Spicy Instant Pot Apple Chutney to accompany the beautiful pork chops we received in our recent MoinkBox delivery (follow the link for a discount code!).  If you are not familiar with the term ‘chutney’ it describes a whole slew of Indian condiments made of fruits, vegetables, vinegar, spices and sugar. My Sweet & Spicy Apple Chutey, however, excludes sugar and instead uses dates and sugar-free apple juice. It’s super quick to make because…Instant Pot of course!

If you are new to the Instant Pot, or if you are afraid of them, I highly recommend that you get over your fear and buy one! Yes, it is a pressure cooker. But no, it’s no scary or dangerous. It’s a HUGE time saver, is easy to use and has so many uses. Think about making pulled pot in an hour…or chicken breasts in 8 minutes…or hard boiled eggs in 4 minutes! Amazing right? This is the one that I have, and I love it, despite the fact that it’s a bit of a space hog:

For this recipe, all you have to do is put all of the ingredients into your Instant Pot, give it a stir, and then cook it on high pressure, manual, for 4 mins and then use the quick release to allow the steam to escape. Remove the cinnamon stick prior to serving.

This Sweet and Spicy Instant Pot Apple Chutney is great warm or cold…served over pork, turkey, chicken or duck!!

Sweet and Spicy Apply Chutney (Paleo & Whole30)

A sweet and spicy sauce that's great on chicken, pork or duck!
Ingredients
  • 1 Tbs ghee
  • 4 Granny Smith apples (chutney is all about the balance between sweet and tart, so Granny Smith apples are ideal), small diced
  • 3 Majool dates, pitted and diced
  • ⅓ cup sugar free apple juice
  • ½ cup of sugar free raisins
  • 1 diced shallot (or small white onion), diced
  • ¼ cup of apple cider vinegar
  • 1 cinnamon stick
  • 1 Tsp minced ginger
  • 1 Tsp mustard seeds
  • ½ Tsp salt
  • ¼ Tsp red pepper flakes
Instructions
  1. Add all ingredients to your Instant Pot.
  2. Stir.
  3. Cook on manual, high, for 4 minutes.
  4. Use quick release to allow the steam to escape.
  5. Remove the cinnamon stick.
  6. Serve and enjoy!
