And not just any ranch dressing…a bright and lemony, herb filled version that adds the perfect amount of healthy fat to any dish…I call it Herby Ranch Dressing. Hubby is English he insists we pronounce it with a hard ‘H’ sound. We continue to disagree in how to say it, but we both agree that it’s great!

Dairy-free, creamy and perfect on almost everything!!!!
Ingredients
- 1 large egg, room temperature
- 1 cup extra light olive oil (NOT extra virgin)
- ½ cup full fat coconut milk
- 1½ Tbs red wine vinegar
- Juice of one lemon
- 1 handful of parsley
- 1 handful of cilantro
- ½ Tsp onion powder
- 1 Tsp garlic powder
- ½ Tsp salt
- ½ Tsp pepper
Instructions
- Combine everything in a wide mouth jar or container and use an immersion blender on medium...and then high... until it emulsifies.
