Pineapple Chicken Kabobs (Paleo, Whole30)

- 3 Bell peppers, cut into large pieces
- 2 Medium red onions, cut into large pieces
- 2 Lbs of chicken, diced
- 5 Pineapple rings, cut into bite sized pieces
- 2 Tbs Olive Oil
- 2 Tbs of Mexican Spice Blend or Cajun Seasoning
- If using wooden skewers, soak them in what while you prepare the rest of the ingredients.
- Place the pepper and onions in a mixing bowl, coat with 1 Tbs of olive oil and 1 Tbs of seasoning.
- Place the chicken in another mixing bowl, coat with 1 Tbs of olive oil and 1 Tbs of seasoning.
- Thread the peppers, onions, chicken an pineapple on the skewers.
- Grill until the meat is fully cooked.
