Spicy Chorizo Frittata (Paleo, Whole30)

- ½ - ¾ lb chorizo (I used @pedersonsfarms )
- 12 eggs (I used @vitalfarms )
- ½ cup coconut milk (I warm it in the can on the stove while it pre-heats)
- ¼ cup @bragglivefoods nutritional yeast
- Salt (just a bit, the chorizo may be salty) and pepper
- 2 bell peppers, sliced or diced
- ½ small red onion, sliced or diced
- ½ cup cilantro
- Pre-heat the oven to 375 F.
- Prepare the veggies.
- In a skillet on the stove, cook the chorizo. Remove the chorizo, leaving the fat behind, and set it aside.
- In a mixing bowl, whisk the eggs, coconut milk, nutritional yeast, salt and pepper.
- Pour egg mixture into a parchment paper lined 9" x 11' baking pan.
- Top the egg mixture with the chorizo, peppers, onions and cilantro.
- Bake at 375 F for 30 mins (or until the eggs are fully set).
