Pesto Cauliflower Gnocchi with Broccolini (Dairy-Free, Gluten-Free, Paleo, Partly Pre-Made, Vegetarian, Vegan)

Quick and easy dinner that's full of veggies and healthy fats!
Ingredients
  • 1 package Trader Joe's Cauliflower Gnocchi
  • 2 Tbs ghee (for frying)
  • 1 bunch broccolini (or asparagus), trimmed and steamed
  • ¼ - ½ cup pesto (dairy free)
  • Salt and Pepper to taste
Instructions
  1. Microwave the gnocchi in a glass bowl for 2 minutes.
  2. Heat a large cast iron skillet till it's hot
  3. Add the ghee to the skillet
  4. Add the gnocchi to the hot skillet and fry the gnocchi, turning occasionally, until they are golden brown.
  5. Plate the steamed broccolini and then top with a portion of gnocchi and a dollop of pesto.
  6. Season with salt and pepper to taste.
