Spice Roasted Acorn Squash (Whole30, Paleo)

- One acorn squash, cut in half and then sliced
- 1 Tbs Mexican Spice Rub or curry spice
- T Tbs olive oil
- Salt to taste
- Pre-heat oven to 400 F
- Line a baking sheet with parchment paper.
- Place the sliced acorn squash on the lined baking sheet, then sprinkle with the seasoning of your choice, olive oil and salt. Toss to coat.
- Bake for 30 -35 minutes.
- Enjoy!
